Today is a GREAT day, folks!
1. It’s NATIONAL RUNNING DAY! AKA one of the best holidays of the year! Did you happen to get out and run? I laced up and went for an easy 3 mile run to celebrate the holiday. I was planning to head to the Toledo area to participate in their National Running Day group run, but it’s forecasted to storm later.
These little balls are packed with protein, super easy to prep, and TASTY! They passed the mother and sister taste test, so you know they have to be good. We are keeping ours in the freezer because that’s how we prefer to eat most treats (I know, it’s a weird family thing), but these would be fine in the fridge as well. I could see taking these in little bags for a hike as well!
Recipe: Makes 10 1-inch balls
1/2 cup quick cooking oats
1 scoop About Time Vanilla Protein Powder (or protein powder of your choice)
1 tbsp honey
2 tbsp unsweetened applesauce
1 tbsp nut butter of your choice
1/4 cup mini chocolate chips
Mix all ingredients in a mixing bowl until well combined. Roll into balls and place in the freezer until set. Store in the fridge if yours last long enough to need storing.
