On Friday I whipped up a lot of different foods for the weekend: chili, pumpkin spice puppy chow, a big salad, and some pumpkin energy bites! I’ve seen these made several ways but this is how I made them! AKA I only used what I had around the apartment 🙂
Pumpkin Energy Bites!
1 15-oz. can pumpkin
1.5 cups oats
1/4 cup chocolate chips
1/4 cup pitted dates
2 T water
Pulse pumpkin, dates, and water in a food processor until combined. Stir in oats and chocolate chips. Drop by the spoonful onto a cookie sheet. Bake at 350 degrees for 12-15 minutes. Let cool.
I stored mine in the refrigerator, but they’re fine on the counter!
